The farm, dating back to 1760, originally consisted of stables and a living area. In recent years, renovation work has resulted in the construction of a stable designed to improve animal welfare.
The dairy cows graze on the land adjacent to the farmstead, are fed with dry hay in winter and in summer with fresh grass mown daily in a closed-cycle method using mature manure produced by their own animals.
An important feature (since milk is made up of 70% water) in addition to fodder and grass, the water with which the cows are watered is very pure as it gushes from the mountains of Sordevolo.
The method of rearing and processing the cheeses, obviously improved by hygiene requirements, is the system used since the dawn of time.
