Mulino Vallini produces organic spelt, soft wheat, buckwheat, rice and ancient maize flours for TeriTori – Rete Agricola Biellese. The cereal line includes spelt bran and hulled spelt.
The farm, founded in 1977 by Daniele Vallini, started out initially for self-consumption and later developed into a more structured enterprise. One of the crucial steps was the purchase of the millstones of the old water mill of Graglia, in the Elvo valley, which, transported to the premises in Vaglio Biella, became the heart of a complete system of cleaning, milling, transport, and automatic packaging of cereals and flours.
Alberto, the owner of the company, also has an eye for environmental impact, so much so that, since 2010, he has built a photovoltaic system to ensure clean and sustainable production.
In the summer of 2019, organic certification of the mill was obtained and, in the autumn of the same year, the installation of a new milling line alongside the historical one took place.
