During this excursion we will have the opportunity to learn about the history and unique products of the Elvo Valley.
We will meet young shepherds who have chosen nature and the mountains as a place to live and work. They will show us the simplicity of their daily life that is full of hard work and sweat, but also the joy and satisfaction of working in nature. Between the quiet and the green pastures, we will discover the ancient knowledge that has been handed down for generations.
The mule tracks will guide us along the past traces that are lost in the mists of time, but still alive in the memory of the alpine farmers. Eventually we will reach one of the most evocative and mysterious places in the Upper Elvo Valley: the Trappa di Sordevolo. A former monastery where history and work, antiquity and modernity intertwine just like toma cheese and butter blend into the perfect mountain polenta. We will continue to the pastures of Elisa Mosca, a young cheesemaker who will introduce us to the world of pastures and cheese. On the way back, for those who wish, we can stop at the Trappa di Sordevolo for lunch (or for dinner with an overnight stay!) based on products from the Alto Elvo and the producers of Slow Food Travel Montagne Biellesi.
