Azienda Agricola Mosca Elisa

Our Alpine pasture is located at 1130 metres in the Upper Elvo Valley on the slopes of Mount Mucrone and a few hundred metres from the Trappa di Sordevolo eco-museum. We have been breeding Pezzata Rossa d’Oropa dairy cows and goats for four generations. We are a family-run business and there is in us a desire to respect the traditions and principles of nature itself. Everything is reintegrated into the farm, in a ‘circular economy’ concept. The animals are fed with organic grass and hay, and are managed with a rotation technique in the use of the meadows to avoid overgrazing and to ensure that they always have fresh grass. During the night and during the hottest hours of the day they are locked in the barn to allow them to rest (thus following the practices taught to us by previous generations). No feed of any kind is given to the animals. As autumn ends, the animals are moved downstream to a farmstead near Biella. There, together, we wait for spring to arrive so that we can return to the green pastures of our mountains.

We produce cow and goat cheeses from raw milk to which only rennet and salt are added. Maturation takes place in special stone cellars for a minimum of 60 days. With the cream that emerges on the milk, thanks to the refrigeration of spring water, we produce butter, an excellent product that encapsulates the fragrances of the pastures of the upper Elvo Valley. The products are sold directly on the farm, in local markets and at local distributors.
