Azienda Agricola Enrico Covolo

The main activities of the farm, cultivation of saffron and nursery of old local apple varieties, started in 1985 and 1995 respectively. In Coggiola (BI), the cultivation of saffron, apples, pears and plums (only old varieties), artichokes and various vegetables, is carried out on long, narrow and steep terraces, some of which have recently been reclaimed. The nursery, on the other hand, is located in Grignasco (NO), in the Bassa Valsesia plain: there are around 200 varieties of apple trees, from the hills and mountains of Upper Piedmont and the result of 30 years of research in the area. The products can be found in Grignasco, where there are the plants, available between November and April (I only cultivate in open ground) and in Coggiola, where there is saffron, apples and vegetables.

In recent years, they have also started growing old roses, with the aim of producing syrup and jelly roses, including the typical Piedmontese/Liguri, which are widespread in the provinces of Alessandria and Genoa. One of these varieties is also quite widespread in the Valsesia and Valsessera area.

A field-collection was set up with specimens from 12 different locations in order to verify possible morphological differences and perfume yields.

Currently, the collection consists of about 1 hundred varieties with a total of 350 plants.
For those interested in learning more, Enrico Covolo is also in possession of a collection of old books on the subject: about 150 volumes.

It’s possible to organise meetings and training through various associations and organisations: schools, garden clubs, Slow Food, public bodies, etc.
