Spending a day in an alpine pasture

After arriving at the farm, we will introduce the place and visit the stone pasture (whose name in Italian is “malga”). Then, we will take a tour of the nearby pastures, talking about the animals present in the “malga” and the most famous breed of the upper Elvo Valley, the Pezzata Rossa d’Oropa: its nutrition, the management of the mountain pastures and the products that can be made with its excellent milk .

We will then go to the dairy, where we will make the “toma” cheese and the “ricotta”. While the ricotta is being formed in the whey, we will visit the characteristic stone cellar where we refine our other cheeses.

Then, we will return to the malga for lunch and for a tasting of our cow and goat cheeses, as well as other excellent local products. We will say goodbye making some reflections on the importance of supporting the small rural mountain realities present in the area.
